Chinese Style Batter

This Chinese Style Batter Mix is so simple it takes less than 5 minutes to prepare. You can coat your favourite meats like chicken, beef or pork in this batter and deep fry it in less than 5 minutes for tasty, take away style battered meat pieces. 

Shopping List

  •  110g / 4oz Flour
  • 2 egg yolks
  • 1 teaspoon of baking powder
  • 4 tablespoons of milk
  • 4 tablespoons of sesasme oil
  • salt and pepper
Equipment Needed










  • Large chinese Style Wok, filled with a couple of inches of cooking oil

Directions

This recipe is so simple it takes less than 5 minutes. Seperate your egg yolks and add them to the flour in a large mixing bowl. Add your baking powder, and whisk into a smooth mix. Add the milk, salt and pepper and sesasme oil. Continue to whisk and set to one side.

When battering your meat, simply coat the meat pieces in flour, and dip them into the Chinese Style Batter Mix. Immediately add them to your Wok with an inch or two of very hot oil. Fry for a couple of minutes until golden brown, remove from the oil and set the pieces onto an absorbant kitchen paper to absorb the remaining oil.

And you're done!

Spicy Chilli Chicken Curry

I'm going to tell you how to cook a tasty, spicey chinese curry which will tantalize your taste buds with fresh, spicey and creamy ingredients - overhauling the boring curry sauce recipe of old.

Shopping List



  •  400g Diced Chicken Breast
  • 2 medium sized onions
  • 1 green pepper
  • 3 cloves of garlic
  • 2 small red or green chillis
  • 100g Curry Sauce Mix
  • 100ml of Creamed coconut (canned or sachet)
  • 2 spring onions
  • salt and pepper

Equipment Needed
 


  • Large Chinese Style Wok
  • Small Blender / Food Processor
Directions

Spicy Chilli Curry Sauce

 Add 1 onion, 2 chillies, 2 cloves of garlic, to a blender and blend into a fine mix. Season with salt and pepper and set to one side.

Boil 500ml of water and add 100g of ANY decent curry powder mix. Now add 100ml of Creamed coconut - either from a can or as a sachet - and whisk until it is creamy and light yellow in colour. Turn the heat down to minimum.

Add your blended onion, chilli and garlic to the curry sauce mix and whisk more. Turn the heat off and set to one side.

Chicken

Add a good splash of toasted sesame oil to a very hot wok. throw in a diced clove of garlic, followed up by 400g of diced chicken - as big or as small chunks as you like. Cook over a very high heat for a couple of minutes until the chicken is light brown, and add 1 coursely chopped onion, 1 chopped green pepper and cook fur a further couple of minutes. When the vegetables are starting to soften up, add your pot of curry sauce and turn the heat down to simmer your curry for a further 5 minutes.

Egg Fried Rice

Scramble two eggs with a little milk and a little sesame oil, season with salt and pepper. Make your scrambled egg either in the microwave or in a hot pan and set to one side.

Boil your rice for 10 minutes in salted water. Drain your rice and add one finely chopped spring onion, along with your scrambled egg. Add a little soy sauce and season with salt and pepper.


And that's it! Serve up the spicy Chilli Chicken Curry on a bed of your Egg Fried Rice and you're done.

Chinese Cooking Made Simple

This is a simple, easy to follow blog I am setting up to share my chinese  take away style recipes with the rest of the world. All of these recipes featured on Chinese Made Simple are combintions of other recipes out there, or inventions based upon my own experiences in the kitchen. Don't think you always have to follow these chinese style take away recipes exactly, measurements can be tweaked to your own tastebuds and favourite flavours.

I love Chinese Food and until a couple of years ago I never knew it was so simple to have your own take away style chinese food in your own kitchen. With just a couple of base ingredients and a nice big chinese style Wok, you too can learn the cullinary masteries of the chinese and never buy a chinese takeaway again!
