Spicy Chilli Chicken Curry
I'm going to tell you how to cook a tasty, spicey chinese curry which will tantalize your taste buds with fresh, spicey and creamy ingredients - overhauling the boring curry sauce recipe of old.

- 400g Diced Chicken Breast
- 2 medium sized onions
- 1 green pepper
- 3 cloves of garlic
- 2 small red or green chillis
- 100g Curry Sauce Mix
- 100ml of Creamed coconut (canned or sachet)
- 2 spring onions
- salt and pepper
Equipment Needed
- Large Chinese Style Wok
- Small Blender / Food Processor
Spicy Chilli Curry Sauce
Add 1 onion, 2 chillies, 2 cloves of garlic, to a blender and blend into a fine mix. Season with salt and pepper and set to one side.
Boil 500ml of water and add 100g of ANY decent curry powder mix. Now add 100ml of Creamed coconut - either from a can or as a sachet - and whisk until it is creamy and light yellow in colour. Turn the heat down to minimum.
Add your blended onion, chilli and garlic to the curry sauce mix and whisk more. Turn the heat off and set to one side.
Chicken
Add a good splash of toasted sesame oil to a very hot wok. throw in a diced clove of garlic, followed up by 400g of diced chicken - as big or as small chunks as you like. Cook over a very high heat for a couple of minutes until the chicken is light brown, and add 1 coursely chopped onion, 1 chopped green pepper and cook fur a further couple of minutes. When the vegetables are starting to soften up, add your pot of curry sauce and turn the heat down to simmer your curry for a further 5 minutes.
Egg Fried Rice
Scramble two eggs with a little milk and a little sesame oil, season with salt and pepper. Make your scrambled egg either in the microwave or in a hot pan and set to one side.
Boil your rice for 10 minutes in salted water. Drain your rice and add one finely chopped spring onion, along with your scrambled egg. Add a little soy sauce and season with salt and pepper.
And that's it! Serve up the spicy Chilli Chicken Curry on a bed of your Egg Fried Rice and you're done.
